Crafted from our sun-kissed California tea estate, this exceptional green oolong tea embodies a symphony of sensory delights. The orchid aroma dances gracefully from the cup, and its flavor reminiscent of Japanese plums intertwined with a dash of cinnamon and sumac. Upon the palate, a sublime fusion of floral elegance and fresh stone-fruit notes with a crisp and refreshing finish.

It’s a spirited oolong that tells a story of spring renewal, we wanted to preserve and enhance the leaf’s incredible natural flavor as much as possible. To do that chose not to roast the tea unlike most oolongs and let the leaf’s natural oxidation provide the nuance.

Hand-Picked for Perfection

Hand-picked from the first flush; the tea is composed of 3-4 leaves and a bud on a single stem. Withered whole like this slows down the oxidation process to preserve flavonoids and creates a broad spectrum of oxidation where the youngest leaves are more oxidized than the older leaves. This broad spectrum has a broader range of flavors to create a complexity through the multiple steeps.

Meticulous Tumbling

The tumbling process was meticulously done to ensure the highest quality tumble that has leaves with oxidized edges and unoxidized centers all the while minimizing bruising. When examining the fully open wet leaf you can see the purple tinge on the edges of the leaf that shows our handiwork.

Harvesting and Processing Information:

  • The leaves are composed of mixed Camellia sinensis var. sinensis cultivars that are 100% estate-grown and were hand-picked.

  • One of the most complicated teas to make. The leaves subsequently underwent an 4-hour withering process at 70 degrees Fahrenheit before being tumbled off and on for 2 hours. This was followed a resting period where the leaves where lightly stacked upon each other to “sweat” on top of each other for 8 hours. This anaerobic (oxygen-free) fermentation step , produces a unique stone-fruit flavor when done right.    

  • Following this it was pan-fired for it’s kill-green step before being lightly rolled for shaping purposes and then slowly oven-dried at 50 C for 4 hours to finish.

Contents: 1 oz (28 grams) loose leaf Oolong tea. One package makes 10 cups of tea. These cups can be re-steeped three times for a total of 30 servings. That comes out to 83 cents a cup for our premium California grown tea.
